Abstract

This article discusses the germination of broad bean seeds (Faba Vulgaris Moench) without a shell, exploring various options for using aqueous mediums for soaking and germination. The objective of this study is to identify the most optimal conditions for germinating shelled broad bean seeds and obtaining enhanced samples with sprouts by utilizing natural mineral spring water from local sources to meet nutritional needs. In the experiments, distilled, tap and natural spring mineral water (Gadabay district of Azerbaijan, mineral water “Slavyanka”) were used for soaking and germination of broad bean seeds without shell (without peel) with further germination with tap water. In this case, broad bean seeds for soaking and germination were utilized in their natural state and in shelled state, obtained according to a previously modified method proposed by the authors, where preliminary short-term hydrothermal treatment was used to activate and remove the peel. As a result of the experiments, it was found that the use of natural spring still water with a rich mineral and anionic composition for soaking shelled bean seeds (cotyledons) in all variants of the study, during the germination process, gives better samples in terms of the length and weight of the resulting sprouts than when using unshelled natural seeds. The new technology allows us to expand the range of natural stimulants for the germination of agricultural crops (broad beans) for the purpose of using in the food industry
