ГРАНАТОВЫЕ ПОРОШКИ - НОСИТЕЛИ ПИТАТЕЛЬНЫХ ПРЕИМУЩЕСТВ
Abstract
Agro-industrial processing activities result in the formation of waste that is disposed of at high economic and environmental costs; however, many of them still contain high levels of bioactive compounds. This article describes the content of dietary fibers and phenolic compounds (which in combination are known as antioxidant dietary fibers) in different parts of the pomegranate fruit (using the example of the Guleisha red variety from Geokchai). The essence of the procedures for obtaining pomegranate powders with the properties of antioxidant dietary fibers from ripe pomegranates and bio-waste from obtaining juice from them (peel and seeds) is described. The physiological and nutritional significance of such products is discussed.
