THE MAIN CRITERIA FOR EVALUATING THE PROSPECTS OF TECHNOLOGICAL SOLUTIONS IN THE FIELD OF PROCESSING BIO-WASTE FROM POMEGRANATE JUICE PRODUCTION
Abstract
In this short article, the emphasis is placed on the fact that industrially applied procedures for the selective extraction of polyphenols from the peel of pomegranates and oil from their seeds (which is now practiced by several companies closer to the production of dietary supplements than food products) are intended for commercial projects with very high prices for the above-mentioned targeted extracts. Given their nature and the low bio-waste efficiency that they can provide, their role in solving the problem of utilization of by-products of pomegranate juice production, of which “whole mountains” are formed during the pomegranate processing season, is negligible. Therefore, it is concluded that for food enterprises, the technology should be selected taking into account the degree of its compliance with the requirements of clean production at the European level, and the general scheme of processing pomegranate peel and their seeds should not be as multifaceted in organizational terms as is the case with their separate processing.
